Description

Ingredients

  • 3 cups (380g) Cake Flour
  • 1 3/4 cups (350g) Granulated Sugar
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 12 tablespoons (180g) Unsalted Butter, room temperature
  • 1/3 cup (80mL) Vegetable Oil
  • 2/3 cup (160mL) Buttermilk, room temperature
  • 1 cup (240g) Sour Cream, room temperature
  • 1 tablespoon Pure Vanilla Extract
  • 4 Large Eggs, room temperature
  • 3/4 cup (120g) Rainbow Jimmies Sprinkles
  • 1 1/2 cups (340g) Unsalted Butter for Frosting, room temperature
  • 6 cups (700g) Powdered Sugar, sifted
  • 1/2 teaspoon Salt for Frosting
  • 2 teaspoons Pure Vanilla Extract for Frosting
  • 3–5 tablespoons Whole Milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Combine the cake flour, granulated sugar, baking powder, baking soda, and salt in a large mixing bowl. Mix well.
  3. Add in the unsalted butter and vegetable oil. Mix on medium speed until light and fluffy.
  4. Gradually mix in the buttermilk, sour cream, vanilla extract, and eggs one at a time, scraping down the sides as needed.
  5. Fold in the rainbow jimmies sprinkles gently.
  6. Pour the batter evenly into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack.
  7. Beat the unsalted butter for the frosting until creamy. Gradually add powdered sugar and salt, mixing until combined.
  8. Add vanilla extract and enough milk for desired consistency, beating until fluffy.
  9. Spread frosting between the layers and around the entire cake once cooled.

Notes

Using room temperature ingredients helps create a smooth batter. Make sure cakes are completely cool before frosting.
