- 1 cup sour cream
- 1 teaspoon vanilla extract

Instructions
- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs with melted butter and sugar in a bowl. Press this mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.
- Beat the softened cream cheese with sugar until creamy. Add sour cream and vanilla; mix until well combined.
- Pour the cheesecake batter into the cooled crust. Bake for 50-60 minutes until edges are set and center is slightly wobbly. Cool in the oven for an hour.
- Chill in the refrigerator for at least 4 hours or overnight. Serve topped with fresh mixed berries.
